Although, in our opinion, some of the very best honey in the UK comes from our bees in Cheshire, we also migrate a small number of hives over to Lincolnshire in July to sit beside fields of borage (starflower). It’s quite a lot of work, moving bees, but we think it’s worth it for the unique and delicate honey that we come home with. The sites are midway between Market Rasen and the River Humber; very agricultural land.
The pale and delicate honey is ideal for adding to yoghurt, ice-cream, or porridge, and is often used in marinades and dressings. Definitely worth a try!
